Today Ab and me hiked a mile and a half 900 feet up the side of House Mountain, Tennessee. At 2100 feet it is the highest point in Knox County (Knoxville).

Park off of Hogskin Road, and hike on up the Southeastern Side. Temperature today was in the mid fifties with a light wind and lots of sun. We sat on massive sandstone rocks amid the Table Rock and Virginia Pines and contemplated distant Chilhowie Mountain and the Smokies even farther.

Note to self. Try this for filesharing. http://www.foldershare.com/

Reading some Patrick O'Brian, Hussein, 1938. Not a story about going from living in a palace to living in a dugout. The story of Hussein and his adventures in India with his fave elephant Jehangir. Nice read for the cold weather. Mangos, cobras, fakirs, beautiful Indian maidens.

Try this:

Boil 5 minutes, then steep 10 minutes:

1 Tbsp fennel or anise seed
6 green cardamom pods
12 cloves
1 cinnamon stick
1/4" ginger root, sliced thin
1/4 tsp black pepper corns
2 bay leaves
7 Cups water
Add, bring to a boil, and simmer 5 minutes:

2 Tbsp Darjeeling tea

6 Tbsp honey or brown sugar
1 Cup milk

Then give it to me.

X-er-Cyser :
We have moved our btach of Cyser, mead made with apple juice instead of water, into the second carboy. Didn't calculate the water in the honey, so the extra half gallon is in a mini-carboy. Looks funky with a few raisins floating in a milky yellow grog.

5 Gallons of pressed preservative-free unfiltered apple juice (apple cider)
5 lbs. Honey
1 lb. Raisins, chopped
Some diced apples and pears
5 camden tabs to kill wild yeasts
Warm honey in half gallon cider
pour all ingredients in fermentation bucket, and shake the bucket, with lid on.
Add yeast, wine yeast if available, cider yeast is even better.
Put it away cuz it will smell strong for several days.
After fermentation slows, about 1-2 weeks, move to glass carboy, straining out the fruit.
Store in basement for a couple months.
Bottle and put up for a year.

We also bottled our Sweet Georgia Brown Ale that has been additionally dry hopped with some Cascade hops for the aroma.

I am feeling less pain, but it still hurts to lift items over ten pounds. And my neck was stiff this morning. An ache that starts in the muscles of my neck and drapes over my shoulders.

Well, doodly, its Dekembre. Abby has got my strep/flu/cold or such. Or she may have peeked it up from anyone of the small tykes we saw at Me Maw's Xmas Gathering Saturday. Today my tonsils are again sore after not hurting for several days. I have had the flu shot. Hmmm. We sat in Gerke's hottub later Saturday, with Captain Gilley.

Friday we smoked our house when the damper on the chimney didnt fully open. But after we fussed around a bit, we had a roaring blaze burning some applewood.

I am trying to get my Director project up online for all to see. At the same time I need to makes some dubs of Otto Filter's home movies. I ended the busy weekend by flushing the coolant system on our Luminator. I rode my bike in for the first time since I got sick before Thanksgiving.

Thanksgiving, a holiday that is under-appreciated. It can be celebrated by Atheist or Anabaptist, Extreme Right-Wing Nutballs or Left-wing Loonies. We should make the day after Thanksgiving a national holiday too. Why a Thursday, but no Friday?
